BBQ Leg of Lamb

Yesterday was Canada Day and one of the traditions of many people celebrating our nations birthday is to BBQ. Late in the day I had a taker for an evening of BBQ and fireworks, but I had nothing to throw on the grill. I’d BBQ’d leg of lamb before with great success so I ventured off to the store with that idea in mind. What we ended up with was a great little tin baggie of veg to go with a butterflied leg of lamb wrapped in prosciutto and cilantro.
Ingredients
1 butterflied leg of lamb
400 grams of thinly sliced (not shaved though) prosciutto
1 large bunch of fresh cilantro
Directions
Layout the prosciutto flat on the countertop, overlapping by half the width of the slices. Do this until you have a bed of proscuitto that is the as long as the butterflied leg of lamb. This should take about half the prosciutto that you have. On top of the prosciutto, lay a bed of the cilantro. Remove any excess stalks, but do not remove the leaves from the stalks. Place the leg of lamb on top of the cilantro and prosciutto. Repeat the first two steps by placing the cilantro followed by the prosciutto to create a complete wrapping of the lamb.
Place the lamb wrap on the BBQ at medium low flame and cook. Flip the meat to cook both sides.
Serves 4 to 6

Did you use full-fat prosciutto or lean? I am wondering, since lamb (and the leg, no less) is a fattier cut of meat, if it would be *too* rich to use full-fat prosciutto? Since it is on the BBQ (and a lot of fat usually melts off in the grilling process) was the finished product quite fatty, or lighter? I am wondering in case I ever make this, since I am partial to lean prosciutto most of the time.

I have had this wonderful bbq as my first taste of lamb and I must say it was great! I had a small piece just to make sure I enjoyed it and wow did I ever…….if you haven’t had lamb before this is a good way to introduce yourself to it.

How did you keep the prosciutto and cilantro from falling off the lamb? Skewers? String?

@leila….I’ve used toothpicks and string before. Anything like that works just fine I’ve found.
